You see all kinds of impromptu kitchens set up on street corners around the world with one purpose in mind, to offer an alternative local food choice that is cheaper and more authentic than the corner cafe or deli.
This elaborate breakfast pastry stand in the Middle East is full of local patrons every morning waiting patiently for a treat to go along with their Chai (tea). An open pot of oil burning on a city street is very different from the hot dog stands that we are accustomed to seeing in the States and would probably get shut down quickly due to safety issues.
