A fresh perspective on inspiration

In the developed world, we look at lack of refrigeration as a big drawback, especially when it comes to fish markets. How can they leave fish out like that, particularly in tropical climates? But what we must keep in mind is where the fish came from, and when it was caught. These fish were caught that same day, from a river which runs directly behind the market, and are constantly being replaced by even more freshly caught fish as the older ones are bought. Which means that despite the heat, these fish are fresher than anything we could find in the “developed” world.
